6. Trout

Olympos isn’t limited to salty‑sea fish. Head uphill to Ulupınar, named after its ice‑cold springs, where trout farming thrives.
Trout are cooked in clay pans with plenty of butter: crispy outside, tender inside – a flavour not to miss amid Ulupınar’s lush, cool setting.
So when you visit Olympos, enjoy the sea and ruins but also treat yourself to trout in Ulupınar – one of the region’s unique tastes.
7. Hibeş

Last on our list is hibeş, another famous Antalya–Olympos speciality.
Often found around Olympos, hibeş is a standout local delight.
This age‑old meze blends tahini and lemon, delivering mild heat, tangy freshness and nutty depth – perfect with grilled fish, meat or chicken.
Hibeş is also used as a sauce: try it over pasta or rice for a new taste dimension.
